Turkey supper casserole

Serves 4

340g left over cooked turkey
1 small finely chopped onion
small knob of butter or oil if preferred
400g can chopped tomatoes
pinch of salt & pepper
1/4 tsp thyme
110g cooked rice
8 green olives, diced
110g cheddar cheese, grated
buttered dry breadcrumbs (optional)

Fry the onion in butter/oil until golden.

Add half the can of tomatoes, salt & thyme, cook for 5 minutes.

Add turkey, rice, olives & cheese and remaining tomatoes into a casserole dish along with the onion & tomato mixture. If wished top with buttered breadcrumbs.

Cook in a moderate oven 180*C/350*F/Gas Mark 4 for 30-40 minutes.
