Steak & Parsnip Pie


2 tbsp Sunflower Oil
1 Large Onion, chopped
1 Garlic Clove, crushed
1lb Lean Mince
1 tbsp Flour
226g/8oz Canned Tomatoes
150ml (1/4 pint) Stock
1 tsp Dried Basil
Salt & Pepper
8 oz Potatoes, peeled, cooked & mashed
1lb Parsnips cooked & mashed
50g/2oz Butter


Heat the oil in a saucepan and fry the onion and garlic until softened.

Add the mince steak and fry for 10 minutes or until browned.

Stir in the flour, then add the tomatoes, stock, salt, pepper & herbs.

Bring to the boil, cover & simmer for 15 to 20 minutes.

Turn the mince mixture into a baking dish.

Mix the mashed potato & parsnip and add the butter, salt & pepper. Beat well, then spread or pipe over the top of the mince steak mixture.

Bake in a preheated fan oven at 180*C  for 25 – 30 Minutes or until the top is beginning to brown.
