Fantastic New Cheeses

It may only be 20 days until Christmas but Santa has arrived today for the Deli Staff who are bursting with excitement about all the new Cheeses that are arriving over the next week.


We’ll start today with Tête de Moine AOC aka ‘Monk’s Head’ is a Swiss, Unpasteurised, Semi Hard, Cow’s Milk Cheese with an very savoury flavour and similar to Comte or Emmental.


This unusual cheese was first produced by the monks of Bellelay Abbey in the Bernese Jura mountains, Tête de Moine (which literally means ‘Monk’s Head’) is a semi-hard cheese with a silky, melt-in-your-mouth texture. It is straw yellow in colour with a spicy, fruity aroma.


During a four to six month maturation process, it receives regular brine washings which produce a characteristic red sticky rind. Instead of being cut, Tête de Moine is traditionally pared with a Girolle or Pirouette to create delicate rosettes, releasing its mouth-watering flavour.
